Carrots contain vitamins B, PP, C, E, K; it also contains carotene – a substance that turns into the vitamin A in the human body. Carrots contain 1.3% of proteins and 7% of carbohydrates. Carrots contain a lot of minerals, which are necessary for the human body: potassium, iron, phosphorus, magnesium, cobalt, copper, iodine, zinc, chromium, nickel, fluorine, etc. Carrots contain essential oils that determine its peculiar smell.

Carrots contain beta-carotene, which improves the work of the lungs. Beta-carotene is a precursor of vitamin A. Getting into the human body, carotene is converted into vitamin A, which is the most useful vitamin for young women. In addition, the healing properties of carrots are associated with improvement of the retina state.

The carrots have to be prepared before the drying. Firstly, one has to remove the carrots rind in the wiping machine. Then several types of the carrots cutting, such as cutting cubes, strips, and rings, may be applied.
It is also possible to get the carrots in the form of a powder. To do this, it is necessary to dry the carrots to 2-5% of moisture and then grind to a powder state. The drying infrared chamber is able to prepare the carrots and remove its moisture up to 2% of the residual moisture in the product.
